I’ve never been a huge cook—never have been, probably never will be. But let’s be honest, if you want to eat at least somewhat healthy and still enjoy your food, you have to learn a thing or two in the kitchen. At least the basics.

When I became vegan 13 years ago, I had to start paying much closer attention to ingredients, and honestly, I’m so glad I did. I had no idea how many unhealthy additives and processed ingredients I was consuming before. Switching to a plant-based diet made me more mindful of what I put into my body, and over the years, I’ve found simple ways to make delicious, nourishing meals without spending hours cooking.

I still like to keep things as quick and easy as possible—because let’s face it, life is busy! Some of the recipes I share here are my own, and many are from incredible cooks and chefs who have kindly given me permission to pass them along. Every single one of them is a personal favorite. I only share my favorite recipes—meals that I make regularly, that are simple, flavorful, and satisfying.
