Crispy Rice ball

Ingredients

– 2 cups uncooked short grain rice
– 2 cups water
– 2 Tbsp vinegar
– 1 tsp sugar
– 1/2 tsp salt
– 1/2 avocado, sliced
– 1 small carrot, finely chopped
– 2 tsp light soy sauce
– Black and white sesame seeds, for sprinkling
– Soy Chili Dipping Sauce

Instructions

– Cook the rice according to the instructions on the packet; I used short grain rice.
– While the rice is cooking, mix avocado, carrots, and light soy sauce together in a bowl.
– Optionally, mix salt, sugar, and vinegar until dissolved for added flavor. Drizzle this mixture over the cooked rice.
– Divide the rice into 6 equal portions.
– Shape and compact each portion of rice using cling wrap.
– Add 1 tsp of the avocado mixture and cover with more rice. Seal and shape the rice into triangles, as shown in the video.
– Drizzle 1 tsp of soy dipping sauce and sprinkle sesame seeds.
– Grill the Onigiri for about 1 minute on each side until crispy.
– Serve with Soy Dipping Sauce.
