Crispy Tofu Soba Noodles
INGREDIENTS
tofu
- 1 block extra firm tofu, cut into cubes
- 2 tbsp oil of choice
- 2 tbsp soy sauce
- 3 tbsp maple syrup
- 2 tbsp ketchup
- juice from 1/2 lemon
SOba noodles
- 400g soba noodles
- 2 tbsp oil
- 4 cloves of garlic, minced
- 4 baby bok choy, sliced
- 1 bunch of spring onion, sliced
- 2-4 tbsp soy sauce
- sesame seeds
- avocado, sliced
instructions
Cook the Tofu:
Heat oil in a frying pan over medium-high heat.
Cook the cubed tofu until crispy and golden on all sides.
Add 2 tablespoons of soy sauce to the tofu, stir well, and cook for another minute until the tofu is evenly coated and sticky.
Remove tofu from the pan and set aside.
Cook the Soba:
While the tofu is cooking, prepare the Soba noodles according to the package instructions. Drain and set aside.
Prepare the Vegetables:
In the same frying pan used for the tofu, add a little more oil if needed.
Fry the minced garlic, chopped bok choy, and sliced onion until the vegetables are tender.
Season the vegetables with 2 tablespoons of soy sauce.
Combine Noodles and Vegetables:
Add the drained Soba noodles to the frying pan with the vegetables.
Toss everything together to combine well and heat through.
Finish and Serve:
Add the cooked tofu back to the pan and toss everything together for another minute.
Transfer the mixture to serving bowls.
Top with sliced avocado, sliced green onion, and a sprinkle of sesame seeds.
